Ko Lanta might at first seem a little daunting for a vegetarian or vegan due to the lack of only vegetarian eateries. Do not let this put you off. A lot of places that offer vegetarian food do have some excellent choices. Even the places that don't openly advertise veggie options will also have the tofu and non-meat options. I would particularly recommend Irie Bar which even has vegan desserts.
However, if you are looking for a truly unique experience then go to Kunda. It really is a step away from your usual Thai fayre and in fact for me it was a step away from anything I'd eaten before! They offer Polish and Hungarian dishes which is a very unusual find here in Thailand. All of their food is vegetarian and most of it vegan, making it the only all vegetarian restaurant on the island.
Although the food is pricey, the portions sizes are good and you will not be left hungry as the food is very wholesome and filling. The bread is so tasty and fluffy and the black rice was also an unusual and welcome find. They also have shakes and teas and coffees as well as wine.
This gaff is also a really interesting place to sit and look around. It's a small cafe with limited seating but it's never busy and it is decked out very cozily. There is also a shop with clothes and accessories and other interesting things to buy.
Although the prices at Kunda may seem a little steep, I find it to be justified as this is very far from your usual Thai stuff and international food is always more expensive anyway. Food like this is a real treat and we all deserve to treat ourselves once in a while.
(By the way, I have no idea what anti-pop means. Anyone?)
